Bit of this, bit of that, best way to make an omelette!

An omelette is a great choice for breakfast. My all time favourite is a protein-packed egg and spinach recipe, which is rich in iron - what more could you want?

**For this one I am going to use**

Mushrooms

Leeks

White onion

Spinach

Eggs (2)

Chop up your mushrooms, onion and leeks and get them cooking, throw in a handful of spinach and mix it all up.

Crack and whisk the eggs in a cup. Pour your eggs on top of your vegetables and let it cook. When the bottom starts to go golden it is time to flip! This is when it get messy. Just turn it over as best you can and make sure its cooked, get your plate and slide the omelette on, season with some pepper (avoid the salt if possible) and Bon Appetite!

The best thing about this meal is that you can have it for your breakfast, lunch or dinner! Whatever suits your fancy! If you are holding of carbs in the evening or morning then this meal is a good choice. If you are looking for a light lunch, this meal will also work!
